Receta de torta o molde de bagre seco

- 2 pounds dried catfish
- 6 eggs
- 4 tablespoons of butter
- 1 cup breadcrumbs, or breadcrumbs
- 1 bigheaded onion
- 1 tablespoon of mustard
- 1 splash of black sauce
- 1 tablespoon tomato sauce
- Salt (al gusto)
- Pepper (al gusto)
Step by step preparation
- The first thing to do is prepare the ingredients; The dried catfish (fish) is drained in salt water from the previous day. (If you can't find dried catfish, you can use it fresh. In this case, you must first fry it and then cook it in salted water, to a level that covers it, so that you can later shred it.)
- The next day the catfish is shredded and ground.
- The oven is preheated to 350°F, then a baking pan is buttered.
- Separately, beat the egg whites until stiff and mix with the yolks, butter, onion, bread crumbs, salt and pepper, add a splash of black sauce, mustard and tomato sauce.
- Then you proceed to blend everything and add the ground catfish; If you notice that the mixture is very dry, you can add milk or water (maximum 1 cup).
- The resulting mixture is placed in the mold and placed in the oven for 30 minutes.
- Then it is taken out, left to rest for a while and removed from the mold.
- If what you want is to make a catfish puff, you should reserve the fish and make the fourth step mixture without the catfish. A layer with part of the mixture is placed in the refractory mold, on top of which the shredded fish is placed, and then everything is covered with the rest of the mixture. It is placed in the oven for the same time; then it is taken out and unmolded.
