Ají de Aguacate: Colombian Spicy Avocado Sauce
Ají de Aguacate is a rich, creamy, and spicy sauce—often likened to a zestier Colombian guacamole—that serves as the perfect companion for roasted potatoes, grilled meats, and crispy empanadas.
The secret to this lightning-fast 10-minute recipe is dicing the ripe avocados rather than completely mashing them, tossing them with a splash of oil and crushed hot peppers, and mixing everything directly over a fresh bed of lettuce leaves.

Ají de Aguacate (Spicy Avocado Sauce)
A creamy, spicy Colombian avocado salsa! Diced avocados seasoned with vinegar, oil, and hot peppers, served over fresh lettuce.
Ingredients
- 2 Ripe avocados
- A splash of Vinegar
- Hot peppers Ají, crushed, to taste
- A splash of Oil
- Lettuce leaves
- Salt to taste
- Black pepper to taste
Instructions
- Prep the avocado: The very first step is to peel the ripe avocados. Carefully remove the pits (do not throw them away, keep them!) and cut the avocado pulp into small cubes.
- Prepare the base: Arrange the fresh lettuce leaves like a bed on a large, flat serving plate.
- Mix and season: Place the diced avocado directly onto the bed of lettuce. Add the crushed hot peppers to your liking, a splash of oil, a splash of vinegar, salt, and black pepper. Using a spoon, gently mix everything together right over the leaves until well combined.
- Prevent browning: Take the avocado pits you saved earlier and bury them directly into the finished sauce mixture. This traditional trick helps prevent the avocado from oxidizing and turning black!
- Serve: Your sauce is now fully ready to perfectly accompany roasted potatoes, beef, pork, or your favorite appetizers.
