Ingredients
  

  • 1 large coconut
  • 1 pound of millet
  • 1 panela

Step by step preparation
 

  • First, prepare all the ingredients, first placing all the millet in water for 1 hour; Meanwhile, proceed to grate the coconut (you can also cut the coconut into fine pieces).
  • A dry cauldron is placed on the fire until it is very hot.
  • Once the hour has passed, drain the millet and place it in the cauldron and leave it until it begins to open like the popcorn.
  • The panela is cooked in half a liter of water until it turns into honey. (You can also cook the coconut in a little water with some panela to caramelize it).
  • When all the millet is open, put it in a container and mix with the grated coconut plus the honey resulting from cooking the panela. (everything must be hot).
  • Then you wet your hands and begin to form medium balls with this mixture, let them dry and that's it.

  • Las Alegrías are one of the popular sweets sold by palenqueras on beaches, streets and squares on the coast of Colombia.
  • In some areas of the Caribbean they are known as “Alegrías de Burro”.
  • In the Palenquera language they are known as ma jarocha.
  • In other Latin American countries, alejas are also usually made with some variations in their preparation, for example in El Salvador they are known as “Alborotos”.
