Bocachico recipe in goat
The bocachico en cabrito es una de las muestras gastronómicas insignias del departamento del atlántico, Colombia; es un plato muy popular en los mercados de la ciudad, este plato se caracteriza por ser rellenado con varios vegetales, verduras y luego asado en hojas de bijao. Aquí aprenderás a preparar el bocachico al cabrito paso a paso y de forma rápida y sencilla.
Ingredients
- 1 fresh medium bocachico (o también 1 bocachico salado y abierto)
- 1 segment long onion
- 3 sweet chili peppers
- 1 ripe tomato
- 1 bigheaded onion
- pita or cabuya (rope)
- bijao or banana leaves
Step by step preparation
- First of all, the ingredients must be prepared; If salted bocachico is used, it should be placed in salt water to hydrate for at least 1 hour, then washed with normal water. (If it is fresh, wash it well and remove the insides and wash it again with lots of water.)
- The long onion and the chili peppers are finely chopped to sauté.
- Then proceed to cut the big onion and the tomato into slices to add them to the sauce, let them cook for a few moments, preventing them from falling apart.
- Then the sofrito is used to fill the bocachico, it is closed and tied with the rope (pita).
- Then you proceed to spread oil on top of the fish, wrap it in a bijao or banana leaf, and cook it on the grill for 30 or 45 minutes.
