Ingredients
  

  • 1 pound black-headed beans
  • 2 eggs
  • 1 tablespoon of cornstarch or cornflour
  • 2 tablespoons of sugar
  • Salt
  • Oil for frying

Step by step preparation
 

  • The first thing you should do is prepare the ingredients, starting with the blackhead beans, which you should leave soaking the night before, changing the water several times until the beans are clean, that is, until they release the shell and blackhead.
  • Then proceed to pass the cleaned beans through a blender until forming a soft and homogeneous mass. Add the cornstarch or cornstarch, the previously beaten eggs, salt and sugar. Mix everything very well and let it rest.
  • Then he proceeds to form balls with his hands with the resulting mixture which will then be fried in hot oil. (If the mixture is too liquid to form the balls, you can use a wooden spoon and gently drop them into the oil without the spoon touching the oil).
  • You should let them fry until you notice that they are golden brown or that they acquire a brown color (medium dark brown), then remove them and drain on a napkin to remove excess oil.
