Baked Chigüiro recipe
Baked Chigüiro is one of the specialties of the gastronomy of the eastern Colombian plains. Chigüiro, capybara or capybara, is the largest and heaviest rodent in the world. Learn in this simple recipe how to make Chigüiro in the oven quickly and easily.
Ingredients
- 6 pounds chigüiro meat
- ½ medium head of garlic
- 2 long onion stalks and a touch of onoto.
- Salt to taste
Step by step preparation
- Wash the meat very well
- Season with onion, finely chopped garlic and salt to taste.
- Leave it in marinade for 1 hour and then put it in the oven at a temperature between 250°c and 300°c, for 35 minutes.
- Serve hot accompanied by roasted yucca, fried ripe or green plantain in patacón. (optional)

- Chigüiro Meat was legalized for consumption in Colombia in 2016, when buying it make sure it is from a farm and not wild.
