Chocolate con Leche de Coco: Coconut Hot Chocolate

The secret to this 20-minute recipe is the traditional frothing technique. By slowly melting the rustic chocolate tablets directly into the coconut milk and aerating the mixture vigorously with a traditional wooden whisk (molinillo), you create a perfectly emulsified, thick, and deeply aromatic base before adding the regular milk.

Ingredients
  

  • 8 Pastillas de chocolate Traditional Colombian dark hot chocolate tablets/squares
  • 2 cups Coconut milk
  • 1 Liter Milk
  • Sugar to taste

Instructions
 

  • Melt the chocolate: The very first step is to place the 8 pastillas de chocolate and the 2 cups of coconut milk into a pot or a traditional chocolatera over low heat.
  • Froth the base: As the chocolate begins to melt, start beating the mixture vigorously using a molinillo (a traditional Colombian wooden whisk).
  • Add the milk: Once you notice that the chocolate tablets are completely dissolved into the coconut milk, pour in the liter of regular milk and add sugar to your personal taste.
  • Thicken and aerate: Continue cooking over medium-low heat, beating constantly and vigorously with the molinillo to create a beautiful foam on top and until the beverage thickens to your liking.
  • Serve: Remove from the heat and serve immediately while it is piping hot and frothy!
