Fresco o Jugo de Guanábana: Colombian Soursop Juice

Jugo de Guanábana is an incredibly refreshing, healthy, and delicious tropical beverage. The soursop is highly prized across Central and South America for its uniquely sweet and smooth flavor profile, balanced by a very slight, exotic acidity.

The secret to this 30-minute recipe is the manual prep work. Because soursop seeds can be toxic if heavily blended and consumed, you must take the time to extract the pulp and manually remove every single black seed by hand. Once cleaned, you can choose to blend it into a light, hydrating water-based fresco, or a rich, creamy milk-based juice!

Ingredients
  

  • 1/2 Soursop Guanábana, ripe and soft
  • 1 Liter Milk For the creamy version
  • Water For the “fresco” version
  • 1/4 lb Sugar
  • 1 tablespoon Ground cinnamon
  • Crushed ice

Option 1 (The Water Method – "Fresco")

  • Extract the pulp: The very first and most time-consuming step is to cut the soursop open and scoop out the white pulp with a spoon. Using your hands, meticulously separate and discard absolutely all of the black seeds.
  • Blend the base: Place the seedless soursop pulp into a blender. Add water to reach your desired consistency and sugar to your personal taste. Blend until smooth.
  • Serve: Add crushed ice directly to the blender or into your glasses and pour the juice. (Chef's Hack: Some people love the texture of the fruit so much that they reserve a few whole pieces of seedless pulp to drop directly into the glass at the end!)

Option 2 (The Milk Method)

  • Extract the pulp: Just like the first method, cut the fruit open, extract the pulp, and manually remove every single seed with your hands.
  • Blend for creaminess: Place the clean pulp into the blender. Add a tiny splash of water to help it blend, then pour in the liter of milk, the crushed ice, and the sugar to taste. Blend on high until you achieve a thick, creamy, milkshake-like consistency.
  • Garnish and serve: Serve immediately in tall glasses, generously sprinkling the ground cinnamon over the top of each glass for an aromatic finish!
