Refreshing Colombian Green Mango Juice

Colombian Green Mango Juice is a highly popular and incredibly refreshing beverage deeply rooted in Colombian and broader Latin American culture. Embracing the tart, vibrant acidity of unripe mangos, this chilled drink is an absolute staple in the scorching coastal regions, offering a sharp, revitalizing flavor profile that perfectly quenches your thirst.

The secret to this 1 hour and 45-minute recipe lies in thoroughly boiling the tough green mangos before attempting to blend them. By pressure cooking or slowly simmering the unripe fruit chunks until completely tender, you break down their rigid starches, allowing them to yield a perfectly smooth, silky purée that effortlessly mixes with water and sugar.

Ingredients

  • 10 Unripe green mangos Mangos biches
  • Sugar to taste
  • Water
  • Ice

Instructions

  • Peel and chop: Begin by thoroughly peeling the thick skin off the unripe green mangos. Carefully cut the tough, tart flesh away from the inner pit and chop it into manageable chunks.
  • Boil until tender: Place the mango chunks into a pressure cooker or a standard heavy-bottomed pot, adding enough water to submerge them. Cook the fruit until the firm pieces become completely soft and tender. (Chef's note: This takes about 1 hour in a pressure cooker, or roughly 1.5 to 2 hours of gentle simmering in a standard pot). Once soft, remove them from the heat and let them rest.
  • Blend and strain: Transfer the cooked, softened mango chunks into a blender along with fresh water. Blend on high until you achieve a completely smooth purée, then pass the blended liquid through a fine-mesh strainer to remove any stubborn fibers.
  • Sweeten and chill: Finally, stir sugar into the strained juice to your desired level of sweetness, ensuring you perfectly balance out the natural tartness of the green mango. Serve immediately over plenty of ice.

Notes

  • Potent Antioxidants: Mangos are packed with carotenoids, ascorbic acid (vitamin C), terpenoids, and polyphenols, all of which are recognized for their excellent cancer-preventative properties.
  • Holistic Health Benefits: Regular consumption of this fruit is known to aid in preventing heart disease, supporting healthy weight loss, improving digestion, boosting visual acuity, maintaining brain health, and even assisting in asthma prevention.
  • Nutritious Peels: While not used in this specific blended juice, the outer skin of the mango also possesses numerous beneficial properties for the human body.
  • A Sweet Alternative: If you prefer a richer, creamier beverage, you can let the fruit ripen fully to prepare the equally famous and delicious Jugo de mango con leche (Mango shake with milk).
