Colombian Johnny Cakes

Johnny Cakes, also historically known as Journey cakes, are a sweet, quick bread beloved across the Caribbean. In Colombia, these rich, coconut-infused treats are deeply rooted in the island gastronomy of San Andrés and Providencia, offering a warm, comforting bite of traditional island life.

The secret to this recipe is allowing the enriched dough to properly rest before shaping and baking. Combining coconut milk, butter, and oil ensures a beautifully tender and rich crumb that bakes perfectly in a hot oven in just 10 minutes.

Ingredients

  • 1 lb All-purpose flour
  • 2 Tablespoons baking powder
  • 1 cup Coconut milk
  • 1/2 cup Sugar
  • 2 Tablespoons oil
  • 2 Tablespoons butter
  • 1 Teaspoon salt

Instructions

  • Mix the dough base: In a large mixing bowl, combine all of your ingredients together, adding the all-purpose flour, baking powder, a teaspoon of salt, sugar, oil, butter, and the coconut milk.
  • Knead and rest: Once everything is combined, knead the mixture thoroughly by hand until you achieve a smooth, consistent dough. Leave the dough to rest for about 30 minutes to relax.
  • Shape and bake: Portion the rested dough and shape it into small bread rolls or slightly flattened patties. Place them in the oven and bake for about 10 minutes. (Note: The oven must be preheated to 350°F for approximately 45 minutes beforehand).

Notes

  • Indigenous Origins: The historical origin of Johnny cakes is widely attributed to the indigenous peoples of the Americas, who reportedly taught early colonizers how to prepare these hearty, travel-friendly staples.
  • Global Variations: Depending on the country, these quick breads can take on slightly different appearances; some regions shape them like small loaves, others as rolls, and elsewhere like small arepas. Similarly, various countries incorporate different local ingredients into their unique preparations.
