Ingredients
  

  • 2 pounds pork or beef backbone
  • ½ pound beef rib
  • 4 shelled almost dry corn cobs or 1 cup yellow corn
  • 1 cup of green beans
  • ½ eggplant cup
  • ½ cup of ahuyama
  • ½ cup of potato pastusa
  • 1 cup of cabbage
  • ½ cup of celery
  • 4 long onion stalks
  • 1 red big onion
  • 2 garlic cloves
  • 1 tomato
  • 3 cilantro sprigs
  • 2 tablespoons of lard
  • 4 guasca leaves
  • Salt to taste
  • Pepper to taste
  • Cumin to taste

Step by step preparation
 

  • The first thing to do is to cook the backbone and beef ribs, previously cut into pieces, in 4 cups of water along with 2 stalks of long onion. They should be left for 20 minutes over high heat. Then add the green beans and lower the heat to medium, letting them cook for another 20 minutes so that the beans and meats soften.
  • Then proceed to add the eggplant, potato, cabbage, pumpkin and celery previously peeled and cut into cubes or small pieces; He also adds pepper, salt and cumin to taste, lowers the heat again and lets it cook for about 15 minutes. If he sees that it lacks water, he adds a little more, since the water level must cover the meats and meats. vegetables.
  • Separately, you must prepare the ruyas, starting by creating the dough, which you will make by mixing the shelled corn, the chopped tomato, the crushed garlic, the other two stalks of long onion, the chopped red onion, the chopped cilantro, salt and pepper; Grind everything very well until you obtain a smooth dough, then add lard. Stir the mixture well, with this dough create some rolls. (If you don't have a grinder, you can make the mace in the blender).
  • Then increase the heat to high and add the rolls (ruyas) to the soup, letting it cook for about 5 more minutes.
  • And that's it, you can now proceed to serve it sprinkled with cilantro.
