Rabbit stewed with coconut recipe
El conejo guisado en coconut milk, es una receta muy popular en la costa caribe (atlántica) colombiana, aquí te mostramos paso a paso como prepararla de forma sencilla y rápida.
Ingredients
- 2 rabbits
- 2 coconuts (o 7 bolsas de 250 gramos de leche de coco)
- 1 ripe tomato
- 1 bigheaded onion
- 1 segment long onion or chives
- 3 teeth of garlic
- 1 chili pepper
- 6 cups of water
- Lemons
- Salt
- Pepper
Step by step preparation
- First proceed to clean and wash the ingredients well; Then proceed to finely chop the tomato, the big onion, the chives or long onion, the garlic and the chili, reserve them until they are ready to be used.
- Then proceed to prepare the rabbit meat. If you yourself sacrifice the rabbits, you must proceed as follows: The rabbits are peeled, removing the skin from each one through the wound that is made in the abdominal part after having made the sacrifice; Carefully, white-looking veins called “musk” are removed that appear on the legs and spine. (If you do not carry out the sacrifice but rather buy the meat at a butcher shop, market or supermarket, proceed from point 3).
- Then proceed to cut the rabbit into pieces and wash it well with water and lemon.
- In a large pot, proceed to marinate the meat with the tomato, the big onion and the long onion, the garlic, the chili, previously chopped, plus the salt and pepper, cover it well and let it rest. (we recommend letting the marinade sit for about 2 hours or a little longer so the meat gets the best flavor).
- Mientras, procede a partir los cocos, los ralla o licua con agua para obtener coconut milk.
- Then cook the meat with the aforementioned marinade for 10 minutes, and then add the coconut milk.
- Let it cook for 40 minutes, stirring occasionally, until you can see a thick sauce.
- This preparation is popularly accompanied by white rice.

- Rabbit meat provides B vitamins, such as vitamin B12, niacin (B3) and pyridoxine (vitamin B6), and vitamin E, with antioxidant properties, protecting cells from aging.
- Rabbit meat provides important minerals such as iron, zinc and magnesium.
