Ingredients
- 750 grams of rice
- 1.5 kilograms of corn flour
- 10 panels
- 10 grams cinnamon
- 10 grams of cloves
- 1 kilo of cheese
- 10 liters of water
Step by step preparation
- The preparation of guarrúz llanero consists of two parts, the first is to make a purple corn liquor, this will be done with: Corn flour, panelas, cinnamon and water.
- Once the chicha is ready, we proceed to wash the rice very well and boil it in four times more water, along with cloves, cinnamon and a panela.
- When the rice is soft or blooms, remove it from the heat and let it cool, then pour the corn chicha into the rice and stir it very well.
- Finally, proceed to grate the cheese and add it.
- And that's it, you can now enjoy this drink. (if you want it to ferment a little more you can leave it at room temperature for a couple of days or if you don't want it to ferment you can store it in the refrigerator)

- Guarrúz or Guarrús is a drink that is also typical of Tolima Grande (Tolima and Huila), there it is known as Huilense guarrús and it is done with some differences.
- In the plains this drink was usually prepared especially on holidays, special and religious events such as Holy Week.
- One of the places where guarrús is most prepared in the plain is in Nunchía, Casanare; although of course it is consumed throughout the department and its surroundings.
- The Guarrúz gastronomic festival is held in Nunchía, which seeks to promote and promote local gastronomy.
