Jugo de Chontaduro: Colombian Peach Palm Fruit Juice

Jugo de Chontaduro is a refreshing, delicious, and intensely nutritious tropical beverage. Ingredients
  

  • 6 Chontaduros Peach Palm fruits
  • 2 cups Milk
  • 5 tablespoons Sugar
  • Cinnamon to taste

Instructions
 

  • Boil the fruit: The very first and most important step is to place the whole, unpeeled chontaduros into a pot of water. Boil them over medium-high heat for exactly 1 full hour until they are tender.
  • Peel and pit: Once the hour has passed, remove them from the heat and let them cool enough to handle. Peel off the skins and cut them open to extract and discard the hard inner seed, keeping only the soft fruit pulp.
  • Blend the juice: Place the cooked chontaduro pulp directly into a blender. Add the 2 cups of milk, the 5 tablespoons of sugar (adjust to your sweetness preference), and a generous dash of cinnamon.
  • Serve: Blend on high speed until the mixture is completely smooth and takes on its characteristic, vibrant yellow color. Serve immediately over ice and enjoy! (Chef's Hack: If you want a lighter, dairy-free version, you can completely substitute the milk with cold water!)
