Jugo de Corozo (Colombian Corozo Juice)

Ingredients
- 1 lb Corozos Small tropical palm fruits
- 6 tablespoons Sugar
- 6 cups Water
- Ice to taste
Instructions
- Wash the fruit: The very first step is to prepare your ingredients by washing the corozos thoroughly under running water to remove any dirt.
- Boil for color and flavor: Place the clean corozos in a cooking pot with enough water to cover them completely. Bring to a boil and let them cook for about 25 minutes. You will notice the water turning a beautiful deep red.
- Pulse and blend: Once boiled, transfer the corozos to a blender and add exactly 3 cups of the ruby-red water they were just cooked in. Blend for about 3 minutes, but you must use a pulsing technique: blend for a few seconds, pause, and repeat. This prevents the hard seeds inside the fruit from breaking and turning the juice bitter.
- Strain and sweeten: Pour the blended mixture through a fine-mesh strainer into a pitcher to catch all the seeds and skins. Add the sugar to the strained liquid and stir well until dissolved.
- Serve: Add abundant ice to the pitcher or directly into the glasses, and serve this incredibly refreshing exotic juice!
