The pandeyucas son unos ricos amasijos hechos a base de almidón de yuca y queso. Suelen tener forma de media luna o herradura regularmente y son muy populares especialmente en la región andina de Colombia.
Pandeyucas Recipe
Aprende en esta sencilla receta como hacer Pandeyucas de forma fácil y rápida.
Ingredients
- 1 pound cassava starch
- 2 pounds of Coastal cheese
- 2 tablespoons of sifted corn flour
- 2 tablespoons baking powder
- 4 eggs
- 4 tablespoons of butter (or margarine)
- 1 Cup of aguadepanela (or warm milk)
Step by step preparation
- The first thing you will do is mix in a non-metal container, the cassava starch with the previously grated Costeño cheese, the sifted corn flour, baking powder, the eggs and the butter.
- Then mix everything very well and little by little add the panela water or milk as appropriate while kneading the mixture. Once you have obtained a homogeneous and soft dough, let it rest for a while.
- Then you will take portions of the dough and form several balls which you must stretch until they are shaped like a half-moon or horseshoe. Place them in a previously greased tin or tray, being careful not to leave them too close together as they will grow.
- Place them in a preheated oven at 350° F for 20 minutes.
- And that's it, you can now enjoy this delicious recipe.
Interesting Facts
- If you cannot find Costeño cheese, you can replace it with one with similar characteristics.
