Fish salpicón recipe
The salpicón de pescado es una receta que se puede realizar a base de distintos pescados, es muy popular en la costa atlántica de Colombia; especialmente en zonas como la guajira se suele preparar de este modo, aquí aprenderás a cómo realizar esta receta paso a paso y de forma rápida y sencilla.
Ingredients
- 2 pounds of fish (can be: snook, shad, bonito, stingray, etc.) fresh or dried.
- 2 tablespoons of oil
- 1 bigheaded onion (median)
- 4 teeth of garlic
- 1 tomato (medium)
- 4 chili peppers
- 2 lemons
- 1 teaspoon of annatto or color (also called sauce)
- 1 splash of vinegar
- Salt (only if the fish is fresh)
- Pepper
Step by step preparation
- First, wash and clean the ingredients well, then proceed to finely chop the big onion, tomato, chili peppers and garlic.
- Then proceed to clean the fish well. Once you have cleaned it, place it to cook in a little water that barely covers it.
- When the fish is cooked, drain the water and let it rest, remove the skin and extract the spinal bones, and proceed to shred it.
- Once you have finished, proceed to prepare a sauce in oil with the onion, tomato, garlic and chili peppers previously chopped, lastly add vinegar, pepper, lemon juice and salt (salt should only be added if the fish you buy It is fresh and not dried fish, since it comes previously salted).
- Then add the shredded fish to the sauce and stir, leaving it to simmer until the sauce dries up.
- It is popularly served accompanied by White rice, bananas or arepas.
Interesting Facts
- If you use dried fish instead of fresh, remember to leave it in fresh water the entire day before preparation, changing it constantly, so that it loses the salt.
- The fish that are popularly used to prepare this recipe are: Snook, shad, snapper, bonito, sawfish, skate, horse mackerel, chucho, dogfish and cojinúa, among others.
