Crab Soup Recipe
This recipe for Crab Soup is one of the most traditional gastronomic samples of Colombian Caribbean cuisine, more specifically from the Department of San Andrés and Providencia. Learn in this simple recipe how to make Crab Soup quickly and easily.
Ingredients
- 1 pound crab meat
- 2 pounds of pigtail or pig's tail in brine
- 3 large marjoram leaves
- 2 garlic cloves
- 1 red big onion
- 1 white big onion
- 2 tablespoons of coconut oil
- 8 cups of water
- 2 green bananas
- ½ red paprika
- 1 pound of cassava (pelada)
- 1 pound yam (pelado)
- 1 pound of potato (pelada)
- ¼ of butter
- ¼ Cup of coconut oil.
- 3 tablespoons of wheat flour
- ½ lemon
- Basil
- Salt (al gusto)
- Pepper (al gusto)
Step by step preparation
- Then, cut the brined pig tail into pieces, soak it in boiling water and then cook it in a pressure cooker for 20 minutes; If you can't find pig tail, buy the pig tail and place it in salted water in a pressure cooker, add plenty of chopped onion and cook it for 20 minutes or until it softens; If you don't have a pressure cooker, cook it in a regular pot for 35-40 minutes over low heat.
- Aparte debe sofreír la mejorana y el ajo en coconut oil. Añade las cebollas cabezonas roja y blanca, y se sofríen hasta que comiencen a hacerse transparentes, y entonces se le añade la carne de cangrejo.
- In a pot, bring water to a boil and when it is boiling, add the bananas, pieces of pig's tail and paprika, and let it cook for 5 minutes.
- Then add the cassava, yam, potatoes and the sauce with the crab meat.
- Then you must dilute the flour in cold water and add it to the soup, then add butter or coconut oil, basil, lemon juice, as well as salt and pepper to taste; and let it cook for 10 minutes.
- Then put the soup over low heat, add the drop dumplings and let everything cook for 5 more minutes.
- Proceed to serve and enjoy this dish.
Interesting Facts
- You can replace the yam with other tubers you have on hand, such as sweet potatoes or arracacha preserved in previously salted water.
- Pig tail and dumpling are very traditional ingredients of the gastronomy of San Andrés That is why they are very rarely found outside the island.
