Tucupí Recipe
Tucupí is a sauce that is popularly used to accompany cooked cassava and plantains, as well as other dishes. This recipe is traditional from the Amazon and is very popular in countries such as Brazil and Colombia. Learn in this simple recipe how to make Tucupí the easy way.

Step by step preparation
- The first thing that is done is to subject the yuca brava to a drying and grating process, then it is squeezed to extract its juice.
- Afterwards, this “cassava broth” is collected, which is yellow in color. Because the yucca plant has hydrocyanic acid, and this is toxic, it is cooked for a period of 2-3 hours, in order to eliminate the poison.
- It is then cooked over low heat for several days, until obtaining a thick, dark-colored liquid. This liquid is then mixed with hot pepper and bottled.
