Crab Backs or stuffed crabs recipe
The Crab Backs either stuffed crabs son una de las recetas gastronómicas mas tradicionales de la cocina caribe, en Colombia uno de los lugares donde más tradicionalmente se prepara en las Islas de San Andrés, Providencia y Santa Catalina. Aprende en esta sencilla receta como hacer Crab Backs o cangrejos rellenos de forma rápida y sencilla.
Ingredients
- 8 cangrejos negros de tamaño regular (o 2 libras de carne de cangrejo y 8 caparazones de cangrejo)
- 2 red big onions
- 1 chili pepper (o ½ pimentón rojo)
- 4 garlic cloves
- coconut oil
- ½ cup of grated cheese
- ½ cup of bread crumbs
- 1 pinch of black pepper
- Salt (al gusto)
Step by step preparation
- First, clean the ingredients and chop the onions, chili, paprika, and garlic.
- Place the crabs in a little boiling water to cook them for 5 minutes, then remove them from the water, break the thorax and clean them. Remove the meat with your hands, separating the fat; You should leave the shell aside, avoid damaging the shell throughout the process because it will be used later.
- Then they fry in coconut oil the onion, the chili or paprika and the garlic.
- Then crumble the meat and mix it with the sauce, plus the fat, salt, pepper and a splash of water, cook until the liquid has almost evaporated and a soft dough is left.
- With the resulting dough, the shells are filled and the grated cheese is added to the filling and bread crumbs are sprinkled on top of it.
- Take the stuffed shells and put them in the oven for 10 minutes. And ready you can serve them.
Interesting Facts
- If you want to give more flavor to the dish you can use coconut milk instead of water in the third step.
- Crab is one of the favorite ingredients of the gastronomy of San Andrés Islands Due to their availability, between April and June there is a massive migration of black crabs on the island, which in addition to being a great spectacle, provide a large amount of ingredients for the region's typical dishes.
