Jugo de Naidí o Acaí: Colombian Pacific Açaí Juice
Jugo de Naidí is a highly refreshing and delicious beverage native to the Colombian Pacific coast. The star ingredient, naidí (globally famous under its Brazilian name, açaí), is the fruit of a South American palm tree and is universally classified as an absolute superfood!
The secret to this 1-hour recipe is the delicate temperature control during the extraction process. The tough little berries must be soaked in warm water (never boiling hot, or it will ruin the fruit!) to soften the skins so you can manually mash and separate the rich, dark pulp from the seeds before blending it with milk.

Jugo de Naidí o Acaí (Colombian Pacific Açaí Juice)
A refreshing, antioxidant-packed superfood drink! Extracted naidí (açaí) pulp blended with milk and sugar for a perfect Pacific treat.
Ingredients
- 1 kg Naidí Açaí berries
- 1/2 Liter Milk
- 1 Liter Water
- Sugar to taste
Instructions
- Soak the berries: The very first step is to wash the naidí thoroughly. Place the berries in a bowl of warm water. (Crucial: Make sure the water is strictly warm, not hot, as excessive heat will damage the fruit!) Leave them to soak for 30 minutes to 1 hour until the skins loosen.
- Mash and separate: Carefully drain off most of the water, leaving just a tiny bit at the bottom. Using a traditional wooden whisk (molinillo) or simply your hands, forcefully mash the naidí to remove the skins and separate the thick pulp from the hard seeds.
- Strain the base: Add a little bit more water to the mashed mixture to loosen it up. Pass the entire mixture through a strainer to catch and discard all the seeds and hard skins, keeping only the rich, dark liquid pulp.
- Blend: Transfer your extracted naidí pulp into a blender. Pour in the milk and add sugar to your personal taste. Blend on high until completely smooth and unified.
- Serve: Serve immediately! This superfood juice is traditionally served ice-cold.
