Jugo de Tamarindo: Refreshing Colombian Tamarind Juice
Jugo de tamarindo (Tamarind Juice) is one of the most popular and ubiquitous beverages found along the Colombian Caribbean coast. This intensely refreshing drink captures the region’s tropical essence, offering a bold, tangy, and sweet flavor profile that provides perfect relief on a hot, sunny day.
The secret to this quick 15-minute recipe is blending the whole tamarind pulp, seeds and all, directly with the water and sugar. This traditional technique extracts maximum flavor and pectin from the fruit, creating a richer texture before simply straining out the hard bits at the end.

Colombian Tamarind Juice
A deeply refreshing, sweet and tangy Caribbean fruit juice made from fresh tamarind pulp.
Ingredients
- 1 cup Tamarind pulp
- 5 cups Water
- Sugar to taste
- Ice
Instructions
- Prepare the fruit: Gather your ingredients. If using whole fresh tamarind pods, crack and remove the brittle outer shells, then pull away the fibrous strings to extract the sticky pulp. (Note: You can purchase pre-packaged seed-in tamarind pulp at Latin or Asian markets to easily skip this prep step).
- Blend the base: Transfer the extracted tamarind pulp (seeds included) into a blender. Add the water and sugar to taste. Blend everything for about 3 minutes. Do not worry about the seeds; it is normal for them to make a loud rattling noise against the blades, and you will easily strain them out later without any issue.
- Ice and adjust: Lower the blender's speed and add ice directly to the pitcher to your liking. Taste the mixture and verify if the sweetness is balanced; if the tanginess is too sharp, add a little more sugar. Let it blend for an additional 2 minutes to fully chill the juice.
- Strain and serve: Pour the blended mixture through a fine-mesh strainer to catch all the seeds and hard fibers, then serve the cold juice immediately.
Notes
- Digestive Aid: Tamarind is naturally rich in dietary fiber. When consumed in highly concentrated juices, it has a gentle laxative effect that helps cleanse the digestive system.
- Diuretic Properties: Tamarind juice is an excellent natural diuretic, facilitating fluid elimination. For this very reason, individuals with pre-existing kidney conditions should consume it with caution.
- Natural Anti-inflammatory: It has been proven that tamarind contains compounds that help reduce various types of inflammation throughout the body, including joint, muscle, and blood vessel inflammation.
- Beauty Benefits: This tropical fruit possesses properties that favor healthy hair growth. It also aids in skin cell regeneration, helping the skin remain soft and smooth.
- Vitamin Packed: Tamarind boasts a notably high content of Vitamin C, Vitamin E, and Vitamin B1.
- Mineral Rich: Beyond its vitamin content, this powerhouse fruit provides vital dietary minerals such as calcium, zinc, potassium, iron, phosphorus, and magnesium.
