Corozo Wine Recipe
Corozo Wine is a very popular drink in areas of Colombia such as Mompox and other areas of the Colombian Caribbean. Here you will learn how to prepare corozo wine step by step and quickly and easily.
Ingredients
- 3 pounds from corozo
- 6 cups of water
- 3 pounds of sugar
- Cinammon sticks
- a screw-top carafe or glass jar
Step by step preparation
- First, the corozos are washed well and the seeds are removed.
- Then the corozos are placed in a pot and cooked with water and cinnamon for 10 minutes, until the liquid takes on a dark red tone. Remove from the heat, let the corozos rest, then strain and set aside for 1 day, as well as the water.
- Once the 24 Hours have passed, take the carafe or glass jar that you chose to prepare the wine and place a layer of corozos, then add a layer of sugar, then another layer of corozos and follow the same process until the container is filled ¾ of its capacity, then finish filling it with the water where the corozos were cooked.
- Cover the container tightly and store it in the shade in a cool place for 2 months, loosening the lid every 5 days. It is recommended that for this process you put the container in black bags, keeping it there, in order to avoid accessing fermentation products.
- Once the 2 months have elapsed, the contents are transferred to another container equal to the previous one, which must be kept closed for 1 more month.
- In those 3 months, the corozo wine is ready, and you can package it either in a glass bottle with a cork or with a screw cap.
