Jugo de Curuba (frequently called Sorbete or Crema de Curuba) is an incredibly refreshing, luxurious beverage made from an exotic Andean fruit. Ingredients
  

  • 12 Ripe curubas Banana passionfruit
  • 2 Liters Milk
  • 1 cup Water
  • 1 ½ cups Sugar Adjust to taste
  • 1/4 cup Heavy cream
  • Ice

Instructions
 

  • Extract the pulp: The very first step is to slice the ripe curubas in half. Using a spoon, carefully scoop out all of the aromatic pulp and seeds from inside the fruit.
  • The first blend: Place the extracted pulp into a blender along with the 1 cup of water. Blend or pulse it briefly until it forms a creamy base. (Chef's Hack: Do not over-blend at this stage, or you will completely pulverize the seeds and make the juice gritty/bitter!)
  • The second blend: Pass the mixture through a strainer to remove all the black seeds. Return the smooth liquid to the rinsed blender. Pour in the milk, the sugar, and a handful of crushed ice. Blend on medium speed. Right at the end, add the heavy cream and blend for exactly 1 more minute to aerate it.
  • Serve: Serve immediately in tall glasses while it is perfectly cold and delightfully frothy!
